A friend just built me one of those magnetic yeast stirrers. Im wondering if i built a pack of safale upto a 2 litre double starter and only used one litre. Put the other litre into the fridge, then next brew bring it to room temp, make another litre of dme mix and leave it for a day or two on the stirrer. Could i keep building up and dividing or will it start to mutate or go wierd? Maybe every 5 brews top it up with an extra half a packet or something.
Any thoughts?

Technically you can but any bacteria present in the yeast will multiply and there will be mutation, etc.

There are many threads on splitting yeast, growing/stepping up, freezing, keeping slants etc. Check them out, try it out - once flavours seem odd, off or unwanted, start again.
 
My thoughts - it's $4.50 a pack.

Once you factor in DME costs and the potential for mutation and infection - is it really worth it?
 
Where you getting it for $4.50???? I have to pay $7! I absolutely know the difference in quality ingredients but I have this underlying tight assedness where I enjoy cracking a beer that cost 35 cents

You would be willing to sacrifice quality to save a few bucks on a batch of beer?
 
Many do until they consider how expensive it is to tip an entire batch.

I include time and labour investment as a cost in that. Make it a bottled ag batch and you're definitely penny wise and pound foolish.
OP - yeast can be split and re-used. As I mentioned - do the research and understand procedures and risks involved.
I think it's more worthwhile with liquid yeast, especially rarer/seasonal releases but if you do it just to make cheap beer, expect it to bite you on the arse at some point.

Even at $7 a packet, it isn't worth the pain of tipping a brew if your yeast handling procedures aren't up to scratch. Personally, I use liquid yeast most of the time and only bother splitting with seasonal releases ATM. Still works out at around $1.50 a litre in raw ingredients for a lot of the beers I brew
