Hey all,

Just come across the Kit for a (Cascade?) Chocolate Porter but, from some reviews I have read, it does not appear to be too chocolaty.
So my question is really just about what I can do to make a nice chocolaty flavour *don't mind having a crack at boiling some spec grains if it works* in my Porter attempt?
I only have the one fermenter so far so I don't rack in secondary I just go straight to bottles if this makes it easier/rules out certain ideas.
I also wanted to top it off with a raspberry flavour but thought it might be too much to hope for this to turn out any good with one of these flavours not overpowering the other too much and having a **** tasting beer to get through 20 ltrs of haha!

But yeah the Chocolate part would be a great start if anyone could help B)

Oh yeah maybe also help on what a good safe yeast is for a Porter if not using the packet yeast...

Cheers

Chris

Toast some caco nibs (available from craftbrewer) and add to secondary/post active fermentation.
Use some chocolate malt (steeped grain).
Lactose sets off choc flavour by adding that touch of sweetness but I'd start with the first two then add lactose to the next one of you think it needs it..

Yeast - Wyeast 1099.

50g of choc malt into 10L brew of a smoked rye beer has given it a definite (unintended but nice) chocolatey flavor at bottling.

Cheers mate. I didn't think that I could get the Nibs over here but we can apparently so all good. Just need the Choc Malt to come back in stock and I will be away laughing.
Only thing I am not certain to be able to source is that particular yeast. Over in my small city we only have one shop and it just has basic Safale dry yeasts... I will keep looking online to see if I can source it from elsewhere round the country.

Thanks again

Check if any of the online sponsors such as craftbrewer will ship and see what the price is.

At a pinch you could use Safale US05. While it's a US yeast and I'd prefer to use a UK yeast for a UK brew, it is neutral and will let the other factors show through. I've used it in a stout before with good results.

While 04 is an 'english' yeast, I'm not enamoured by it or its performance.

Fair enough I was going to ask about the 04 but you have saved me the hassle. 05 might have to do for a first time round.
