I'm always learning on this site; having just gone AG (due to the encouragement here and at my LHBS) I really owe heaps to the guys on the forum.

I'm now trying to wrap my head around mash pH... I'm sure I'll understand it eventually...

You don't need to wrap your head around mash pH until it clearly becomes a problem. I reckon almost no new AG brewer finds it one, I certainly don't. RDWHAHB.
