Fellow Brewers,

I'm making a spur of the moment gluten free beer as my last keg is half empty and I can't face the shame of having no homebrew. I've done the mash but can't decide what hops yeast etc to use, throw me some suggestions. I'm making a pale/amber ale OG around 1.040 looking at around 4.5% ABV.

20 litres

2.7 kg Millet Pale Malt
0.3 kg Millet Light Crystal

I have 0.5 kg of clear Belgian candi sugar and 1.0 kg of dark Belgian candi sugar, I'll need about 750 g to get me up to my OG.

I am keen to try out the Nelson Sauvin hops I have, never used them. Also have POR, Hersbrucker, Saaz, Cascade, Amarillo and Northdown.

Yeast I have US56, S04, S33, T58 and the Wyeast 1272 GF which I also haven't used.

I'm toying with the idea of :

500 g clear candi sugar
250 g dark candi sugar
Mixture of Nelson Sauvin, Cascade and Amarillo to about 30-35 IBU with good flavour and aroma doses
The Wyeast 1272

I'll no chill it as I couldn't be stuffed staying up late tonight so I can use the liquid yeast.

Boil starts in an hour - any suggestions???

I think what you have planned is great. I've done a NS and Cascade mix, with NS to bitter, and the mix for all later additions. That worked well and I see no reason why adding Amarillo to that wouldn't be a good plan. :party:

I've never used that yeast, but sounds like it should work fine.

I've done a cascade and amarillo mix before so throwing in the the NS should make it interesting. I'll make up a mix of 40 g of each and add 20g at 60, 15, 10 and 5 min and then throw the remaining 40g in the cube. Should be nice and tasty :wub: :beer:

The Wyeast 1272 is American Ale II so should fit. Time to see if liquid yeast is worth the dough.

Mmm.......

Nelson Sauvin smells fantastic, and mixed with cascade and amarillo it was just divine.

In the cube now and i'll pitch it in the next day or so.
