I have recently made a Chocolate Porter and am looking to add Cacau Nibs, as recommended by Maltose Falcon site.
I received the nibs after I had racked to secondary and I am nevous about just throwing them in the secondary after about 7 days.
I don't want to cause an infection in unsanitary nibs being introduced whilst there is little fermentation activity. Should I or shouldn't I?
