One of the true pleasures in life is enjoying a few brown ales before the Bledisloe cup.

I encourage anyone who has not made a brown ale, how simple it is and I have kegged this one 10 days ,I dont bother filtering brown ales who cares .

There is no need for secondary if you cold steep the dark grains and add them to the last 30 mins of the mash the beer comes out reeeeeeeeal smooooooooth .

I am over the moon with this batch and am priming myself for the match at five, if we look like loosing I will soon fall asleep .


I have to prepare myself to cook the BBQ before the match

Hey Pumpy. Was hoping you'd be adding your knowledge to the Style of the week last week - Brown ale. :rolleyes: What hops do you use?

Don't really think there's any danger of you falling asleep this afternoon (sorry Doc). :super:

I'm glad you're enjoying your brown ale, however you can get away without going to secondary, without cold steeping and reducing the mash time for 'dark grains' and still have a smooth beer.

Stuster I just use the same as my bitter but it dont come out as bitter cuz of the crystal

The recipe looks great Pumpy. Thanks for posting it. I'll be making a brown ale very soon.

I might up the hops a bit :wub: but that's just me. (Just the bittering hops really as the flavour/aroma look good.)

Have you used any other yeast with that? I'll probably use either Burton ale (WLP023) or London Ale (WLP013/1028)?

You may be right about the Hops I usually make the recipe with about 4kg of pale malt but this time I used 5kg and I did not increase the hops as I thought it may be more to style .

I could not stop drinking it before the Rugby and when we were winning I slowed up a bit as it swung the other way never mind I had a great arvo & evening .

I have not used the liquid yeasts for sometime now just use the SA04

I'm thinking the beers I had watching the rugby tasted better than yours, but being a kiwi and with the benefit of hindsight its a bit of a given.

Enough of that,
thanks very much for posting that recipe, I bottled my brown yesterday and it needs some adjusting for the next batch. I over bittered it I think, was aiming for something the malt would shine through in, it'd be OK with some aging but I tend to get stuck into em quicker than you can say "my bottles are firm".
I bittered it with some pacific sunrise I had in the freezer, mistake number one. Next batch will be solely fuggles.
I put in 250gm of chocolate, mistake number 2. Next batch I'll down that to 150gm I think. Shame I won't be able to taste this bottled one first but I'll just have to go with my gut.

'barneyhanway' you brown will probably be OK it may just take a little time to mellow , brown ale is nice to mix 50/50 with bitter and have a "Brown and Bitter" that is always a way out if you can mix with a less bitter ale .

I think it was a Brown Ale by Jazzafish (in Xmas case) that I had at Linz's which was pretty darn fine! As much as brewers tend to become hop heads theres a lot to be said for a big malty brown :beer:
You may have just changed my plans for my next brew
