Recipe Golden Ale - James Squire Golden Ale Clone.

2.6kg of Joe White Traditional Ale Malt.
1.2kg of Joe White Wheat Malt.
0.2kg of Joe White Amber Malt.
1kg of LME.
100g of Amarillo Hops.
1 X Safale US56 yeast.

1. Mash all grains in 10 litres of water at 66 degrees.

2. After 75 mins, remove liquid to boiler.

3. With 9 litres of boiling water add in and stirr and add too wort. - Aim for 78 degrees temp.

4. Make sure I have 15 litres of water and bring to boil. (60 minute boil)

50.00 gm Amarillo Gold [9.50%] (20 min) Hops 30.1 IBU
10.00 gm Amarillo Gold [9.50%] (15 min) Hops 4.9 IBU
10.00 gm Amarillo Gold [9.50%] (10 min) Hops 3.6 IBU
10.00 gm Amarillo Gold [9.50%] (5 min) Hops 2.0 IBU
20.00 gm Amarillo Gold [9.50%] (0 min) (Aroma Hop-Steep) Hops -

6. Cool in sink changing water every time it gets hot, until water remains cold.

7. Add to fermenator and depending on temp add 8 litres of either pre-cooled in freezer or just tap water to get temp to 22 degrees.

8. Stirr to the *********, then add yeast - which I'll have made a starter for.

9. Let ferment.

About right fellas?

Depends on just how close you want to get.
That sounds like a tasty beer.
According to a recent post on another forum with comments from Chuck Hahn the Golden Ale contains the following:
30% Wheat Malt
Pride of Ringwood for bittering
Amarillo for everything else.

So what you have will be close and as I said, looks pretty tasty, but there's some more info for ya...
I'd also put the flavour hops in at more like 10 rather than 20...

6. 20 mins from end add 25g. - Add 1 litre of dried malt extract.

7. 5 mins from end add 25g.

8. Cool in sink changing water every time it gets hot, until water remains cold.

9. Add to fermenator and depending on temp add 8 litres of either pre-cooled in freezer or just tap water to get temp to 22 degrees.

10. Stirr to the *********, then add yeast - which I'll have made a starter for.

The instructions part sound spot on. Not too sure at the recipe side of it though? Do you really need to 200gms of Amber malt? I dunno? Wouldnt using the amarillo lend itself more to an american pale ale rather than a standard amber ale?.......but hey......make it anyway, why the hell not - I reckon it taste bloody magic! Thats what is all about - experimentation! Have Fun.

I was actually considering that myself.... I cant get POR but might make the amendment for the wheat grain.

My usual 28 degrees as I am told I love beers at!

Nah around 18 up to 20.

BTW steve am bottling my partial pils this w/end, had a taste of it out of the fermentor and I have to say its beautiful!!!!
 
Can you get Northern Brewer?

I've made very close to JS Golden with

*NB for bittering (60 min)
*Amarillo @ 10,5,0 and dry hopped

NB makes good sub for POR in this case...

Maybe Im miss reading this but you will only need to sparge once with 9L to get your preboil volume of 15L. I would also sparge with boiling water, this will get your grain bed closer to 78C and will improve your efficiency.

Good news Drew about the temp and the partial pils. I took a reading of mine last night (its cc'ing)...I could have drunk it then and there. Are you going to bulk prime or measure individually?

C'mon all you AG'ers - more advice and pats on the back. Its because of you rabble that hes even considering this recipe. I reckon its sensational! :lol:

I'm confused, is it suppose to be an Amber Ale clone? or a Golden Ale clone?

50g of Amarillo for a 60min boil will give you a very bitter beer, assuming the A/A of the Amarillo is about 9.5%

If you're trying to clone the amber ale, I'm not sure about using the Amarillo for flavour and aroma. If you were doing a Golden Ale, then you definately would be using Amarillo for flavour and aroma.

Dude, Jye is "The Beer Dork" :ph34r: take his words as gospel! ;)

Previous to the edit you were mashing 4Kgs of grain with 10L water then having two 9L sparge's and aiming for 15L in the kettle... :blink:

Just work on the losses of 1L per Kg grain and maybe a touch left behind in the mash tun. So 10L mash less 4L grain absorbtion + 9L sparge = 15L (possibly less a bit in the mash tun)

The recipe and process are looking better now DC. :beerbang:

I was referring to my other threads where Steve or I requested information.

And Samwise do you recommend that I cut back from 50g?

If so what to and should I add those hops later in the boil? And yeah its 9.5%

I have some Cascade that are about 5.5% could they be of use? - Roughly a 100g.

Some of that snobbery that I am fond of refferring too.

I would use about 18-20g @ 60mins

I'm not sure what hops are used in the JS Amber Ale. If you have a read on the malt shovel website it will probably give you a hint, or search this site as I'm sure others have had a crack at cloning the amber ale.

download promash or go to beertools.com and use the recipe calcs so you get an idea of the ibu's you'll get due to how much hops you use
