Hi i have made a few saisons over the last two years and now it is time to try something different.

I have read The farmhouse ales book by Phil Marowski.
I enjoyed this book alot.

And in this book there is a commercial recipe of a biere de garde where they boil extract for an extended period of time.

I was wondering has anyone tried this or do you have a recipe i should give a go.
 
I did a very basic one. Dingemans pils and some dextrose I think, mashed at 62 for 90 mins to dry it right out. Then I used wyeast 3725. I'm a big fan of trois monts, and I believe this yeast gives similar flavour characteristics. Mine was around 8%.

There are big variations in beire de gardes, as you'll see in the book, some use crystal and are more on the Amber side. Some are pale and dry but still malty.

Some use clean lager strains, some use ale strains.

Decide how you want it to taste then build a recipe from there.
