hi guys havent been around for a while doing the whole seperation and new house and everything but have finally run out of brews and was thinking its to cold at moment to brew anything but guy at lhbs said great time to be doing a lager so was thinking of putting down a muntons premium lager any hints or tips please running to about 10-11 degrees daily highs at moment and overnight lows of about 5,so hints on yeast would be good he recommended saf 23

any help appreciated
 
I recently brewed two lagers with liquid Danish Lager 2042 yeast at 8degC. It ferments nice and clean and dries out well. If you insulate your fermentor with an old blanket/doona then the temp should stay in the middle of your day/night tim temp e.g. 7degC.

If you are going down the dry yeast route (which many lager brewers do) then make sure you pitch at least two packets. Lots of info on here about lager yeast etc. You will notice a sulfur smell during fermentation and bottling but it will dissipate with time. Once bottled/kegged I would leave it for at least two months at cooler temps to condition.
