G'day all

Has anyone had a crack at the recipe for Ballantine's XXX in the May-June Brew Your Own mag? I'm going to have a go at it but just wondered if anyone else had done this and, if so, what they thought of it.

Anyway, here's the recipe. Any helpful suggestions cheerfully accepted. The hops below come from HopsDirect - great service, so can't wait to see how fresh the hops are.

I brewed it back when the edition came out, the corn was there, but I was a little underwhelmed with the hop flavour and if I brewed it again, I'd up the late hops by 25% or so.

Cheers Browndog. I'll follow that advice. I floated the original post across the folks on the Northern Brewer forum and someone who has brewed the recipe many times before said that I'd never replicate the original flavour without hop oil so you are obviously on to something. As an APA, did it remind you of any other beer?

Without the maize it could be any old APA, but with the maize standing out in the malt profile there is not really much to compare it to other than a Classic American Pilsener. I'd be inclined to have a flameout addition of cascade as well as the dry hop.
