Long story short
Made a brew about 24months ago. A month out of the bottle hated it! Screwed up my notes and destroyed the recipe in a rag!
Throw the cartons in the back of the cupboard and forgot about them..
Just came across them again, dates coming up nearly 24 months. Chucked a couple bottles in the fridge and opened one a couple hours back.
Wow tastes great! Time has made it very smooth and got rid of its over powering bitter taste.
Now 3 in I wish I kept the recipe! !
Ever had this happen? ?
 
Lots of beers improve with age.

I never like to drink stout under 6mnths.

Coopers Vintage is a beer that actually needs ageing. Some are drinking Vintage that are 4 years old
 
brewed a belgian dubbel once bittered with por. the end result was a horrible bitter mess, so i threw the bottles in the back of the cupboard trying one occasionaly. well after 12 months or so i gave up and tipped the beer on the lawn except for three bottles. after another 12 months i decided to see if it had improved at all and wouldnt you know it it was nectar of the gods.
