Australian Ale? More experimenting required?

There is also Topaz that could be used in this, mmm, I think my next brew I may go with a bit of a topaz and galaxy mix.
 
Hows this looking?

One base malt JW Pils
One specialty malt JW/BB crystal or Raw Wheat??
One adjunct CSR Brown Sugar
One bittering Hop Stella?
One flavouring Hop Stella or Summer?
One aroma/dry Hop Vic Secret
Yeast Coopers at low temp or a lager yeast like s189 at elevated temp and no lagering or even a saison strain?

seem to be getting close i'll play with promash and see what happens
 
I think a Saison would be good, fool proof for the fucked up weather we get here.
 
Ok, hows this look:

FG 1.010

Mash
Infuse at 66-67 for 75 minutes
Infuse to 72 for 15 minutes
Batch sparge

Two grist options:
#1
Ale 85%
Raw flaked wheat 15%

#2
Pils 85%
Crystal 7%
CSR Brown Sugar 8%

Hops
30IBU
7g Ella at 60min
20g Ella at 15min
20g Vic Secret at whirlpool

Yeast:
Coopers or Belle Saison

Soo which grist option?

comments on hops and yeast?

Maybe grist #1 with Belle Saison?
