Just in case you haven't seen this yet, Ricky Carroll, a talented cheesemaker from New England in the U.S has a website with all the cheesy resources you'll need - and some things we can't get from cheeselinks, including ingredients and detailed instructions (including pictures) on making various cheeses.

Would you mind elaborating on the bean roasting saga Kong ?

probably a little OT, but yeh i roast my own coffee. You havent had real coffee until you grind some fresh 3-5 day old beans and brew em. Plenty of different ways to do it. And a few different places to purchase green beans. Flick me a PM if you want some more info. Cheers KoNG

KoNG failed to mention (understandably so) that the reason his coffee roasting is "ridiculed" relates to his use of floral oven mitts and a hairdryer for part of the process... :lol: :lol: :lol:

there's nothing wrong with a hairdryer when you are roasting coffee. Not sure about oven mits though..

By all accounts he temperature surfs with some bird called Silvia too... Strange days indeed. :ph34r:

AFter watching "Cheese Slices" on Fox I've been itching to get into some cheese making as well. Maybe we should form the ISB and Cheese makers Club!
 
Mmmm...

I too have been ridiculed for my coffee roasting habits, but I completely agree with Kong: there's nothing like freshly roasted coffee beans...except perhaps freshly brewed beer... :)

Speaking of which, I opened the first bottles of my first AG beer on the weekend and both me and my fellow drinkers were blown away! I saw conceptions of homebrew shot out of the air in front of me as they swallowed the tasty goodness in disbelief! Thanks heaps to everyone on this forum for all of the information and guidance! :D

Anyway, cheesemaking is in the back of my mind, but next stop is sausagemaking...found a great little deli just out of Canberra that sells mincers nice 'n' cheap...

DJR - a cheap n easy source of rennet is unflavoured Junket tablets from your local super market. I made a basic hard cheese using cultured buttermilk for a starter and junket that tasted a treat.

That would be good - if i could bloody well find them anywhere! I have tried every supermarket within a 5km radius of my house - not enough people make Junket anymore obviously

Try a big woolies store be aware they are usually well hidden <_<

I have got junket from both Coles and Woolworths.
Like winkle said they hide the stuff pretty well.
Try either where the yoghurt mix or jelly mix is.
Or sometimes it ends up in with the cake making / decorating stuff.

Junket tablets are no longer available in supermarkets, when I started cheesemaking I looked everywhere for them. After contacting the company that made the junket tabs I was informed that the product was removed from the shelves. However some of the ladies that work there have set up a bit of a cottage industry supplying the junket in powder form and I was able to get a couple of vials from them, one of which I have here in fornt of me if you want it DJR. PM me and I will send it to you.

It's a good way to "have a go" at cheesemaking but you can't beat Rennet.

Cheers Andrew, exactly what i thought. Looked right where the other guys were saying - in with the custard and jelly mixes. No trace at all. Asked somebody and got a blank stare.

I think i might purchase one of those kits from cheeselinks, that includes vegetarian rennet.
