First brew in over a year I missed my target gravity. Target was 1.052, actual was 1.044. Was cooking up a hefeweizen from this recipe: http://aussiehomebrewer.com/recipe/1516-bavarian-hefeweizen/. Was my first wheat beer.
Mash schedule was as follows:
50c protein rest for 1/2 hour
68c saccharification rest for 1/2 hour
76c mashout for 15 minutes
My normal mash schedule for everything is an hour at somewhere between 62 and 68 depending on what I'm making and then a 15 minute mashout. I'm wondering if I should have done my protein rest as was and then a longer saccharification rest? I guess it'll be a session hefeweizen which is fine.
