    So This Is Christmas

I am sure that there is contradictory evidence for what you do in your brewery and yet because it works for you, it still happens that way. People are the same about their faith. LET THEM BE. The question from Jase was not whether or not a "higher power" existed or if faith was to be believed...

    Micro's In Sydney

Thanks. I guess being in Chatswood you would know what is on the North Shore. I dont mind heading into the city if that is what it takes to get a good beer.

    Micro's In Sydney

I am looking for a Micro in Sydney, on the north shore if possible to go when i am in Sydney in January. My wife and I will be having our first night without the kids and I have been given permission to plan the dinner/drinks events and would like to find a Micro. I was just reading the post...

    Dried Yeast Users

I use one of those kitchen stick blender things to aerate my wort. I used to sprinkle and leave but i open ferment (well no air lock anyway) so i wanted the ferment to start a bit quicker and the sprinkle and leave method was not starting quick enough (for my liking any way) i have recently...

How Decieving Is It To Empty The Keg For Next Brew

That is a great idea. I have a set of scales in the shed for grain etc, so it wouldnt be too hard to weigh the empty kegs. I like it when you take a keg to a party and get somebody who has never poured a beer before and they empty it. I have my work Xmas party this weekend that i am doing a...

    White Rabbit Brewery

From the Australian Yesterday! It will be interesting to see what their flagship beer will be. THE team behind Little Creatures beer has unveiled major expansion plans for 2009 including a new drop from an east-coast brew house. White Rabbit will be made at a newly built brewery at...

    2008 Hop Plantations

Hi Guys, it has probably been mentioned before on this topic, but i couldnt find anything. I know a lot og guys who have had stalled hops because of a cold snap in the weather. Think of this as a false spring/winter cycle. Hops wont flower (usually) in the first year, and normally only...

    90% Efficiency?

My hydrometer is calibrated to 15.6 degrees and anything within about 7 or 8 degrees is fairly acceptable. Both beersmith and promash have hydrometer correction tools built in that will help you. I deliberately test my post boil wort with temps as high as possible because my hydro only goes to...

Where Did Your Username Come From?

I had a mate who had the nick name of schooner because the day he was born his old man was at the pub wetting the head. they asked him what he was going to call his new son and in his drunken state looked at the glass he was holding and said "schooner". the nickname has stuck ever since. that...

    Head Master Glasses

It is interesting that you say this. I have been a part of side by side comparisons with headmaster glasses and "regular" glasses and if 2 beers are poured and left for about 10 minutes with 1 in the headmaster and 1 in the regular glass, the headmaster glass will keep the beer with a nice...

Anyone Wanna Send Me A Sample?

I am not arguing about the way beers are judged by any means, as I have only been brewing this year and am as yet undecided on what opinions to form. The point I was making was that if crunched wants to try some great AG beers and talk to some great AG brewers than the city in which he lives has...

Anyone Wanna Send Me A Sample?

I would have to second the post on getting to the Canberra Brewers club. there are a lot of very experience brewers who are more than willing to share some of their beer with you. ACT has had a number of National champion brewers and National beer of show winners and they really know what they...

    My Cherry Popper.........

I have insulated mine with some insulating foam i got from Clarke Rubber. It only cost me about 15-20 dollars and i have boiled without it and it took much longer and was by no means a strong rolling boil, so the foam does the job. it is easy to cut to size to fit your specific urn.

    Electric Urn 40l

I didn't see the price but my local Harvey Norman store had some when i was in there today. I would imagine that they would be fairly expensive through Harvey Norman though. I got my 30l on ebay, was $199 plus postage of about $30.

    Funniest Beer Name?

"Bickering Bush Brew" bickering bush is the name of the place that William Wallace had his first fracus with the english. When i brewed my first AG is was a scottish 80 and with my surname (wallace) I thought it appropriate.

Australian Story On Abc1 Last Night

I have just spent the last several years living in griffith. I taught Casella (yellow tail) and DeBortoli kids and children of many other Italian famalies and a nicer, more generous group of people you would not find. The school i was at was a growing school and the families donated enough money...

    Kevin Rudds Home Brewing Bonus

Like many on this thread i got my nose a little bent out of shape by some of the posts. I paid for my Uni degree, so did my wife. We are both teachers so i feel that we contribute something to society. We have 2 kids, and even on full time wages we will fall under the threshold for the $1000...

How Do You Decide What To Brew?

At this time of year i have a number of birthdays, anniversaries and other celebrations so i try to brew a mix of beers that will suit most taste ranges. Today was a brown porter, tomorrow will be an ESB, next week and American brown and APA. Last week it was an Irish red and a hefe. this...

Most Brewed And Favourite Beer Style, And Why?

With you on that. Before i started brewing i thought that lagers and lighter beers were great, but i now love the body of the darker beers plus the roasty/chocolatey flavours with a porter.

Ummm, Maybe Going To Be A Big Ferment - Blow Off Tube?

By the sounds of it you have a very active ferment. this means that there will be more than enough rising gasses from inside the fermentor to keep any bugs out when you take the lid off. while you have got this ferment it would be safe to leave the lid off as long as it is not in a place where...
