Leave somewhere in a cupboard for 6 months. Beer taste changes with age. A light tasting beer is best consumed quickly while a heavy tasting beer is best left to mature for many months.

You need to start raising the temperature for a D-rest before it has fully fermented out. I would also have gone up to at least 18 degrees instead of 16.
I don't know where some people work but sick leave should definitely accrue. You only lose it when you resign.
In Victoria they must also accept a statutory declaration in leu of a doctors certificate.
