    BIAB recirculating wort overflow

    I found that the mesh of my voile bag was too fine and kept clogging when recirculating, which may be part of your problem. I switched to one of the bags that many HB shops now stock and that works much better.

    If you can, I highly recommend following Zwickel's weizen mash schedule, or at the very least, try to include a ferulic acid rest. I also find that fermenting at 17 gives me the best balance of clove and banana. I'd also be inclined to swap some of the wheat malt for Pilsner malt. Good luck...

    I had no success with the WHite Labs Brett Bruxelles Trois. I tried it in an APA, a Belgian Golden Strong, and a Saison. They all came out very thin bodied, tasted unpleasant, and did not develop the strong fruity aroma that the yeast is famous for.

    I have finally finished a keg of dunkelweizen that was kegged about 4 months ago and I reckon it tastes the same now as it did when first kegged. You can interpret that however you like but I think it shows that ageing isn't needed but also isn't harmful.

    Just take the bock out of the ferment fridge and allow it to warm up a little at ambient temps. Depending on where you live ambient temps at the moment should be about right for a diacetyl rest.

    Just looked at Alehouse Facebook page. It says they will have 14 Stone beers, so I'm happy with that.
