    I have read several anecdotal accounts of finings such as gelatin and polyclar used in kegs have reduced tannins (thus reducung astringency) ... I wonder if giving your beer the freeze treatment helps to drop the tannins out of solution. +1 on eisbock ... are you sure it is completely thawed...
