Vinegar worked wonders on my copper stuff when i was just starting out, now that I have StarSan there's no reason to use anything else cost per litre is low and it works a treat. When using vinegar I was using it at 50/50 with water and getting it to a hottish temp.
You use a calculator like this LINK and a good mercury thermometer to get the probe resistance coefficients and input them into the BCS program so your read-outs make sense.
You could also use some washers to limit the amount of thread taken up. It might be a bit of trial & error / hit & miss with the thickness of the washer to get it right. Stainless or squash-able silicon, not sure about using nylon on the outside re heat resistance but it won't be in contact with...
