Here's a link showing how I modified my plastic false bottom. Very happy with the results. I don't see why it wouldn't work with stainless.

Do you know how many people have become ill from botulism in canned wort? My understanding is that the answer is zero. Zilch. Nada.
So, if this is true, should it have any effect on the hysteria?
There is an HBS owner in the States who regularly stores wort under N2. It is pretty much insoluble, I believe. Ask him about it.

You could set your BK in a tub, and use a crimped stub of tubing on the IC exit. Have it exit out the top, spraying in a fan-type pattern down to the tub as a way to cool the water. Then just keep recirculating it. I've done something similar before.
You know, if you put an airlock with a sanitizer soaked cotton ball on your container, you don't have to worry about vacuums, crushing, or infections. Can you rig up such a thing on these jerry cans?
A carboy of 1.060 brew will put out about 500 liters of CO2. Three batches at once will most likely overfill your fermenting chamber many times over! Fall in and it's lights out.

I got antzy and kegged up my latest NC beer. It's a Vienna lager and, though young, this beer is well on its way to becoming OUTSTANDING! It's not as clear as it will get, but I'm gonna have a hard time staying out of it. :)

I just tapped my latest NC beer. It is a 4 SRM, 12 IBU American Premium lager. One measly ounce of Northern Brewer for 60 minutes and that's it. This is supposed to be the type of beer that would show a flaw in the NC method? Ain't no canned corn here. For what it is, it's a good beer. Easy...
I've never noticed one with a side discharge. Most times they're just bottom dumpers. I like the chute! Very nice. I just got my gearmotor yesterday, and was doing mockups today. Now I gotta rethink things!
I sampled an extremely low-bittered 4 SRM NC'ed lager in early secondary yesterday. I'm afraid I've made Budweiser or something! Anyway, this delicate beer so far showed no funk. I know the feeling is that a light lager would be more likely to reveal flaws in the NC method. I'll report further...
