Someone I knew had an issue with airborne bacteria. It was eminating from a drain in the brewery. Took them a long time to find the problem. The beer would seem ok just fermented, then a week or 2 later would turn. Good luck.

Does anyone every try single batches (20l) in the 50l tun. If so how does that turn out ?

I believe things are pretty sanitary after using sodium perbcaronate. But I too give a iodophor shot afterwards. Usually I also add in my tubing when I do this.

Last time I made one I used american ale. Obviously no smoky character, therefore next time I use this yeast for a scottish I will add some smoked malt to give it that character.

Last time I tasted Belhaven Scottish ale it had a slight background smoky flavour. I would add a touch if trying to replicate this beer.

Northerly aspect is the best. As mentioned they need plenty of sun.

I've seen quite a few clone recipies. They general grist consists of 70%pale, 20%flaked barley, 10%roast barley.

I aim for 45L. Last time I ended up with 2 * 18L in the fermenter. A couple of 1litre starters bumbs up the volume as well.

Thanks for the link. My milk just went out of date. I have tried pest oil in the past, but with the hot weather it causes leaf burn.

Does anyone know the best way to get rid of spider mites ?

I find wine supply stores are good for these things.
