    Philly controlling sourness

Had a good read on the deep dive paper and Best practices for Philly to "control" sourness level on next fruit sour. Previous brews are outside my preferred taste range. Just wondering has anyone have more experience for amount of malt/dex/SG to start with to reduce sourness somewhat along with...

Carb cap for PET bottles issues

Having some issues with those screw on carb caps for PET soft drink bottles and would appreciate some advice. Periodically fill 2lt ex soft drink bottles to share brews but it never seems to carb up enough. Squeeze air out of bottle give it a good belt with the CO2 gas in line so nice and...

Dark Wheat turned sour advice needed

Hello all, After some 50+ Kits and partials which I've enjoyed to varying degrees, managed to get a Coopers Int. series Wheat beer plus +Coopers dark malt can brew to taste sour. I've not come across this before so seeking an understanding of possible causes. Normal ferment temps, SG, prep as...

    Toucan Belle Saison

Looks dam nice to me! Lucky enough to have another keg in fridge put in last night so some taste "testing" will be required tonight....bout 8 pints should do it :D The small hops addition of Nelson Sav does no harm either and compliments it well imho bt1

    Toucan Belle Saison

I've been lucky enough to assist in draining 2 kegs of this one over the Xmas break...geez it's an nice drop and great return on the little effort required. It's all about the yeast with some great flavours coming through. This brew is a bugga as it restrains me from more AG/BIAB brews...A...

WTB - Gas burner for 70L BIAB pot and bench

Howdy, Been distilling for past 3 years or so and regularly run either 50lt or 100lt washes. From experience the Mongolian burners can and do soot badly if not run over 50% so a slow controlled lower heat is a PITA. As an option have cut jets down to 12 only but it does not resolve the sooting...

    Toucan Belle Saison

Howdy, Nothing flash or difficult nor time consuming but a real nice beer. Got some great aromas and finishing tastes. Good body and mouth feel. Have no restraints about recommending it, sure it can be pimped (the next 2 versions for mine, wheat malt, hops etc) 1 x Cooper Pale Ale can 1 x...

japanese rice malt? recipe ideas please

I used a couple of 500gm jars in 2 x Thomas Cooper Series pils to keep it light...very nice drop and well worth the effort...Just substitute for the light dried malt.. About 10gm of short boiled Saaz just to boost the fairly good current hop strength... Enjoy! bt1

    Summer Brewing

Hello all, Gotten to the point where would like to hear what you gurus brew in summer. Not talking about refridge as a way to avoid increased temps, but brews truly suited to the warmer months. Wheats, steams perhaps, changing yeasts to avoid lager restraints of temp...love to here your...
