Yeast for a Sorghum 'Weißbier' style beer

Hi everyone,
I now have to brew with sorghum extract since being diagnosed with coeliac disease.

I want to have a go at making something along the lines of a Bavarian Weißbier. Can anyone recommend a good wheat beer yeast that may give the brew some banana flavours. Also if anyone has some advice or has tried something similar, I'd love to hear about your result.

Any Weizen yeast is good for the banana, as well as W1214 (Abbey alle flavours including big banana).

Be careful with dextrose too, as it may be derived from wheat. Mybe investigate liquid glucose at a health food store (of maybe the lhbs may have access).

Good luck. Wyeast make a range of GF yeast.

As Les said there are GF yeasts available. That means that the majority of beer yeasts are not specifically GF - something you need to watch if you have coeliacs. Sorry if you knew this. My mum is a coeliac and I know that sensitivity can be extremely high.
