Hi everyone,

I have kinda gone a bit nuts buying grains and hops etc. without really doing my research properly/ building or finding a recipe and here's what I ended up with -

Hops: Cascade, Citra, POR, Galaxy and Simcoe.
Malt: 25Kg of Ale (BB-AU), 5Kg of Oz Dark (BB-AU) and 5Kg of UK Dark Crystal.
Yeasts: Safale US-05, Saflager SW-34/70.

Has anyone any suggestions as to what recipes might work out OK with the mentioned ingredients?

Cheers in advance if anyone could point me in the right direction.
 
P.S. I was thinking along the lines of doing a pale ale and maybe an Aus Lager upon purchasing.
 
Your two styles are perfect.

Aus lager with Bb Pale, possibly some maize or rice at 20% of grist, 25 IBU of POR at 60mins and 34/70.

Pale Ale, 91% Pale malt, 9% crystal, 15 IBU of simcoe at 60 minutes, 15 IBU of Cascade and Citra at 10 minutes, Us05.
 
Cool, thanks Raj. I'm not a complete AG virgin but finding it hard to build the confidence to step out of the comfort zone of known equipment and recipes.
 
I have brewed the Ale/ have it fermenting and plan on brewing the lager within the next few days. It was my first time using the new 3v HERMS system and things worked out but didn't go 100% to plan.

Can someone please have a look and see if I have calculated the % grist right here and let me know if there is any problems with calculating this way. The theory I am working on is Cheeky Peaks recommendation to use 1Kg grain to 2.5L of water with their HERMS and cereal mash instructions from - http://beersmith.com/blog/2013/09/06/cereal-mash-steps-for-all-grain-beer-brewing/. I have decided to use a decoction to try help bring the main mash up to target temp quicker between the protein and saccharification rest because I'm not quite hitting my target temp on time. If this works it will mean I should be able to run the HERMS consistently as it should be.


Mashtun fit - 31L of water : 12.4Kg of Malt = 1Kg of Malt : 2.5L of Water.

Total 9.92Kg Malt, 2.48Kg of Rice, 31L of Water - 20% of 12.4Kg = 2.48Kg of Rice; 12.4Kg - 2.48Kg = 9.92Kg of malt

Decoction Mash - 2.48Kg of Malt and Rice : 12.4L Water.

Main Mash - 7.44Kg of Malt : 18.6L of water. (31L - 12.4L = 18.6L), (9.92Kg - 2.48Kg = 7.44Kg)

Here is the basic plan -

- Mill rice in Thermomix? Add 2o% of crushed barley malt from overall grain bill. (2.48Kg)

- Add 5L of water @ 68-78 C per 1 Kg of rice and hold temp for 20 min.

- Slowly raise to a gentle boil and hold for 20- 30min.

- Add to main mash whilst hot; when raising from protein to sach rest.

To Do - *Calculate temp fluctuation/ temp to add decoction step

*Calculate sparge water vol.!
