My new favorite thing is roasted wasabi almonds. I already dry roast almonds for to churn into a spread so I'm halfway there, but I haven't had much to do with using wasabi in cooking. The shop bought stuff looks like the nuts may have been tossed in some medium containing the wasabi then baked off or something.
Anyone got an idea bout the process?

I assume you could use the same process they use to make wasabi peas, just didna quick search and found a recipe, could just try substituting the almonds for the peas

Dry mead.

You can get dry powdered wasabi at any Japanese market and probably most general Asian ones.

I have a wasabi rhizome. I harvested it 12 months ago after 2 years growth. We had a wasabi party.

Amazingly complex and nothing like the colored horseradish you often see. I would guess that a lot of nuts and peas are the same. You use a ceramic grater. The leaves are also great for spiciness in a salad.

If you're interested I could probably cut you a zome knob next harvest. Might take you a while to grow it up though...

Sure am interested. We have a kind of stepped garden / retaining wall thingie going on out the back of the house. Well drained and gets bugger all direct sun so should be ideal. Let me know how you go.
Cheers.

See Airgead, throw it out to the forum and bingo! I'm on my way to wasabi self sufficiency.

Thake that sarcastic google search engine..

Ohhhhhhhh damn. NOW I am
Inspired!!!! Fresh wasabi is the absolute bomb. Wasabi leaves are awesome as well. Wrap some sushi rice and pickled ume plum in a wasabi leaf...breakfast!!!

Ammonia makes a good substitute in a pinch.

Diggers sell wasabi plants which can be grown in the garden, I believe their natural habitat is clean freshwater streams and it grows like a large watercress.
