I've made it before but simpler,

2.5kg pils
2.5kg wheat
500g honey
tettnang to 15IBU
Tettnang late addition

it was a real hit and a serious swiller, even got the thumbs up from the girls, bannana and honey are good mates IMHO, this time round though i'd like to give it some character with some caramel and spice.
 
+1 on skipping the honey, though it was a good idea to throw in some caramunich. I would personally have more pale malt than wheat- 3kg pale and 2.5kg wheat. However this is what pushes me down the road of gigantic mashes, since you'll probably have to adjust the caramunich to compensate :p
 
it was my origional opinion on skipping the honey with the mach I version, but it produced the goods i reckon and at those levels its very subtle. But then again i just love honey, i eat it by the spoonfull, i'll think about dropping it, maybe do a split batch.

Why increase the pal
 
Don't really agree with that, pnc. The sort of classic weizen mix is 60% wheat, 40% pilsner. Have a look at the Style of the Week on weizens for some great advice. Linky.
 
Agree, at least 50% malted wheat in a Weissbier, 70% is best.
If keen on honey aroma and flavour then use it for priming. It saves drying out your beer too much and in the boil I always lose honey attributes.

yeah, Im with Stuster, my personal recipe is 70% Weizen & 30% Pilsener malt, but the posted recipe looks fine.

fifty-fifty should also be good for a Weizen and a little Caramunich is fine, also the Hallertauer Perle or Tettnanger is fine for a Weizen.
The late hops addition you may omit, a Weizen shouldnt taste after hops, not at all. 500g of honey is your personal thing, if you like it, then its fine.

good luck with your recipe, it certainly will become an excellent Weibier.

And just for another option, you can throw some munich in the pilsner portion too...

I'm a 60/40 ish split man myself, with sometimes a little munich or caramunich in the 40 section.

cheers mate, i think you're right about the late hopping, was after some complexity that i had lcked with past attempts. Might try some temp adjustments and let the yeast do its thing.

Question here from a Newbie K&K mostly excuse ignorance. Slightly confused by estimated and measured OG and FG readings .
Actual alcohol by volume 0.6 % ??
The measured numbers seem extremely low or is this something with wheat as opposed to barley ?
I just did a LCPA kit clone and OG measured was 1.052 SG.

I am sure I am missing something fundamental here. :huh: waiting to be put wise.

The poster has not provided ACTUAL SG and FG . The figures quoted may be system defaults in the Brewing Software
he used. The difference between the Actual SG and FG is only 5 points hence the Alcohol by Volume %.

No, you're not missing anything, TB. The numbers there are just wrong. The estimated OG is actually 1054 with FG of 1013 which would give a bit over 5% alcohol. The 0.6% comes because the measured OG and FG are just 1010 and 1005. I'm guessing gibbocore just hasn't put in the real ones. Or else his efficiency is reeaaaaaaaallly low. :lol:

TB, as Gap said they are probably default setting... a lot of brewers are just to lazy to enter the measured values.

Ha, nah, i haven't brewed it yet! Its just the beersmith defaults.

Hey mate, i add it 1 minute before flamout, just to disolve and sterilise (even though hooney is supposedly clean). I just find it gives a floral sweetness that i enjoy. Its fairly subtle at those quantities, and its prob only methat can taste it, prob cause i'm looking for it.
