I had the this beer recently on tap aT the Stanley pub in Tasmania and absolutely loved it. Anyone have any ideas on the yeast that's used in it. I have a reasonable idea of how I will approach the the grain and hops but no idea of the yeast. Any help appreciated.

Pretty certain that they use SO4 exclusively though.

Nah, that won't happen. The dude who pays the bills likes the results so we'll keep it that way, which is more than fair enough.
