I was just going through my records and found out that I have never used S-23. My next brew will be a Vienna style Lager. Has anyone ever used this yeast for this style or give me any advice on what it's like?

its not the best lager yeast out there.

It can be fruity

get something cleaner and maltier

Hi Steve

I've played around quite a bit with different lager yeasts brewing a batch and splitting it, fermenting half with one yeast and the other half with a different yeast. In these experiments I've tried S-23 a number of times. I've never got the fruity flavours that people refer to, but I still wouldn't recomend it. It's just a dull and fairly uninteresting flavour profile that you get from this yeast. If using a dry yeast I would certainly recommend 34/70. This is a good all round lager yeast and is spot on for a Vienna Lager. 34/70 has a nice malty flavour profile, and is quite soft. Even though attenuation is on low end for a lager yeast 69%-73%, this is perfect for a Vienna Lager. It also works quite well in a BoPils.

On ANZAC Day I made a Vienna Lager made from virtually 100% Weyermann Vienna malt with just 50 grams of Carafa Special 2 for colour adjustment. A single addition of Hersbrucker at 60 mins for 22 IBU's and then pitched with 34/70. I've made this beer a number of times, occasionaly switching to Tettnanger, and it's always a winner.
