Hi Guys,

Doing a Pilsner - can I pitch 2 packs of dry S23 at 12c or does the yeast need to be rehydrated? I have done searched but have found conflicting answers?

Clarification appreciated.

I recently double pitched the S-189 strain just dry at 11 degrees and it fired within 12 hours or so.

Im pretty sure you will be fine, but ill let others who are more experienced give you advice!
I mainly didnt rehydrate due to laziness and also I worry about infections etc.

Pitching Instructions:
Re-hydrate the dry yeast into yeast cream in a stirred vessel prior to pitching. Sprinkle the dry yeast in 10 times its own weight of sterile water or wort at 23C 3C. Once the expected weight of dry yeast is reconstituted into cream by this method (this takes about 15 to 30 minutes), maintain a gentle stirring for another 30 minutes. Then pitch the resultant cream into the fermentation vessel.
Alternatively, pitch dry yeast directly in the fermentation vessel providing the temperature of the wort is above 20C. Progressively sprinkle the dry yeast into the wort ensuring the yeast covers all the surface of wort available in order to avoid clumps. Leave for 30 minutes and then mix the wort e.g. using aeration.

Recommended fermentation temperature: 9C 15C, ideally 12C.

It is very confusing - one or the other would be good.

I have pitched it dry and apart from the rotten egg smell that it puts out it fermented well and the beer was good.
I gave it a diacetyl rest at the end of ferment to clean it up.
I use S189 now for a good result and a lot less hassle.

My experience with dry yeast: you can pitch fresh yeast dry into regular gravity wort with no problems. Lagers I would pitch two packs or build up (I normally use liquids so would build a starter for lagers) If concerned with pitching rate vs gravity, you can rehydrate which will give you peace of mind and is easy enough to do. If rehydrating, follow the specified instructions for the yeast you are using.
