So I was sampling some of dads kolsch and it was awful, just awful. I just couldn't figure out what the problem was, didn't taste infected, until I came down to do a brew with him this weekend. He's been covering the kettle during the boil to "stop bugs getting in the beer".

Now being a product of his generation he refuses to get rid of the beer any way other than drinking it, so how do you get rid of dms from finished beer

I was thinking that as the c02 generated during fermentation can carry off dms what about force carbing the beer, shaking the **** out of the keg to drive the c02 out of solution, venting the keg and then repeating? Thoughts?

Also bugs in beer should be fine, right?

The only suggestion I can make is to let him drink it all and to boil with the lid off next time!

All I really wanted to say is that a Kölsch can be such a beautiful beer and its a shame that it has DMS this time round!

You can force co2 through it and vent.
Not 100% sure about the wisdom of shaking it though - patience might be a better way forward.

A short vid on scrubbing DMS and sulphur you may like.
