HNY all,

Below is
a recipe for a red lager that I have fairly faithfully reproduced from another source. I'm keen to make this beer but I'm a bit concerned about the amount of crystal (and wheat, but that is a lesser issue) in it. Should I lose the straight crystal addition given the carared and the cara-aroma? Any constructive ideas greatly appreciated.

Regarding the source of the recipe ToG, what sort of feed back or comments has it had from the author or others? 710 gms is a lot in a recipe that size.

Thanks Razz - I do agree. Apparently it's a perty popular recipe amongst the North American homebrewing fraternity. But I had made a bit of a cock-up with my version by adding some CaraRed in and not reducing the other crystal malts accordingly. I've decided to drop the CaraRed altogether, keep the medium crystal in (230g) and sub the other darker crystal with CaraAroma.

I can post the update recipe if anyone is interested.

I have used and enjoyed a similar recipe that uses Melanoidan rather than the Cararoma.

Melanoiden sounds like a good option, too. I was actually going to try this but opted for Cararoma as this is seen as a reasonable sub for Special B, which was stipulated in the original recipe. You've given me a great excuse to do another version!

Melanoidin will certainly give you the red colour.

So, for a beer like this, would you opt for melanoidin over cararoma?
I must say: this is looking more like an Oktoberfest recipe with the cali common yeast! :lol: No bad thing there either I guess.
