Hey guys I love my house summer hefeweizen beer 60-40 wheat - pils and hopped with hallertau.
On my next double batch I'd like to split it and try a rasberry or similar.
My idea is to add 500gms of honey to the recipe and once cold chilled add some rasberry cordial to the keg.
Or racking to secondary on some rasberrys or other fruit. I reckon it would go dosn a treat.
Maybe mash a bit lower if using the cordial as it should back sweeten a little.
Any ideas?

I just brewed a raspberry dunkelweizen. Bought 2kg of frozen raspberrys, boiled in a bit of water in a pot then strained and poured the liquid only into the fermenter after a week. Recipe I found said you can use up to 4kg

I have had success when bring fruit to the boil quickly.

My process was to purée the fruit and then bring it to the boil. As soon as it was at the boil I turned it off. The fruit did not have a cook/stewed taste yet. (I used raspberries as well)

The only reason I did it was to try to kill any bug that were on/in the fruit
