When using plugs or flowers, I put them in a clean muslin bag, boil for a minute or two with a few pieces of cutlery in the bag for weight and tip into the fermenter.

The boiling not only sanitises but helps to wet through the plugs before dumping into the beer.

I was using WY1318, described by Wyeast as a "true top-cropping strain", and even after fermentation had finished there was a thick crust of yeast on the surface. I needed the spoons to get the bag under the surface.

The bag obviously keeps flowers out of harm's way when ready to bottle or keg.
