Evenin Brewers,

Just started sampling this one at 3 weeks in the bottle and it's turning out to be somthin' else,

Still needs a week or 2 to round out a bit but here's what's in it,

23 litres
O.G. 1036 without dex.

2kg LDME
1kg dextrose added @ day 2

250g Carared
150g Pale Crystal
100g Carapils

15g Galaxy @ 60mins
15g Galaxy @20mins
15g Galaxy @ 5mins

Cultered 2 litre Coopers yeast starter

pitched yeast @ 20 degrees C and fermented @ 19 degrees C.
final volume 25 litres inc. starter and diluted dex.
Primary for 2 weeks including cold crash 1.5 degrees C for 2 days
F.G. 1.010
bulk primed with 170g dextrose

My first taste of Galaxy and have to say I find it deliciously passionfruity which goes well with the Coopers Yeast.

I didn't want the yeast to get a taste for dex until fermentation was well under way and was aiming for a low FG. It ended up closer to 1.009 actually, the 1.010 was the 1 week SG. Fermentation was all but done and dusted by the end of day 3.
