Hi guys, I've just redesigned my mash tun to incorporate a false bottom and a length of braid. Pictures to follow. I've designed it this way to help boost my efficency. Only time will tell if it works.

Anyway, to test out my design, I'm just using whatever ingredients I have in stock. which I can't brew a particular style, but I've come up with this:

**** ALE.

5kg Pale Ale
1.5kg Wheat
.5kg munich

Hope schedule TBA, but I only have tettnang and hallertau to choose from.

ferment with US-56

So far I have mashed in at ~64.5^c
water:grain ratio 2.5:1


suggestions of where to go from here are most welcome.

Imperial Koelsch? 23litres and 72% efficiency will give you 1.063 or so OG, which is about 20% over the style for koelsch, so add 20% over 30 IBUs. I've used US-56 in kolsch before and while not as interesting as a real Koelsch, makes a decent beer. The "Imperial" and American yeast go together so well, imho :)
