oops!!

I transfered a brew from the cube into my fermenter this arvo and forgot to put water into the air lock....my cleaning and sterilization regime is pretty thorough, should i have any major concerns about infection? the fermenter had been sitting there for around 3 hours before i realised and added the water.

you should be fine mate. i had one of my kids pull my airlock out once it could have been out for up to 2 days as far as i know and the beer still came out fine. bugs cant go upwards or crawl so the s bend in the airlock should stop anything getting in.maybe use some starsan or iodophor solution in the air lock just to be sure.

i dont use airlock anymore i use glad wrap and the seal ring from inside the lid as a big rubber band to hold it one.. works great and no worries about water :)

You shouldn't have a problem, depending on what happened...

If the liquid was drawn into the fermenter because something happened to create negative pressure (like lifting a heavy fermenter), you can get into some trouble if there was anything in the water.

To stave off this risk I usually fill mine with sanitiser solution. Vodka makes another good lock substance, although it's a bit more expensive (and wasted on an airlock quite frankly :)

You should be ok. If I'm using a yeast or recipe that could cause froth-overs (for example using a big whack of yeast cake from the last brew) I often just cover the grommet hole on the top of the fermenter with a crown seal for a few days and only use the airlock when the big krausen has subsided.

You'll be fine. I use a bottle-cap over the hole for the airlock nowdays as I don't like trying to sleep to the sounds of vigorous fermentation. Haven't had a problem so far.

Cheers - boingk

Really? It's music to my ears. Trying to catch 40 winks in my outside laundry on the other hand........

I tipped a no chill brew onto a yeast cake that I had just kegged and by that night it was climbing out of the airlock. The sanitiser I had put in the airlock was all over the top of the fermenter with much krausen as well

Managed to cool it down by setting the fermenting fridge to 14C to slow it down some.
First time I have had a blow out like this, but was expecting it as I put 26L in the fermenter with the yeast cake, not leaving much headspace
