If you are using Stainless Steel conical fermenator that's a bit hard to put in a bath and to big to put in a fridge. I'm not say that people in Perth made the best home brew but temp has been around about 22 to 28c with concentrate brews and very drinkable.


As I said - your beer. If you think it tastes good at 24 degrees then go for broke.
 
So dropped all down to basic all grain will this work

Efficiency 70%
Boil Time 60 min's


Grain Bill
Pilsner Joe white 5 kg


Hop Bill
POR 15g 60min's Boil
POR 15g 30 mins Boil
POR 12g 10 mins Aroma
Whirlfloc 1g 15 min's boil

Single step infusion at 66c for 60 min's
fermented at 18c with WLP009 Australian Ale Yeast
 
Will you be cooling your wort or "no-chill"?

Ps. Having a SS conical is no excuse for not controlling temperature. :)
If you can afford the conical, how can you not afford to cool it?
