hi,
can anyone tell me how to extract brew low alc beer appox 2.5%.
please?

Try a light kit beer, like Coopers Mexican Cerveza, and just use the tin and nothing else, make it a 20L batch.

Welcome.
 
Sugar or malt is what makes the alcohol, so if you want less alcohol, put little or no sugars in.. works with all kits.
 
...and/or use a low attenuating yeast like 1968 London ESB Ale Yeast. This will convert less sugars to alcohol...

Recently stuffed up a wheat beer and it looks to be close to 2.6 - 3% (I was aiming a bit higher ;-). <_<

I used the Muntons Wheat Beer kit and 1kg Cooper Wheat Malt Extract. Result was an OG of 1024 with FG of 1010. Should have used more malt extract me thinks.

Brew is currently in secondary to be bottled next weekend...

Mullet, what batch size was that for? I'm assuming that the kit was 1.7kg. If you made a 23L batch, you should have ended up with more like 1040. Readings can be out if the wort didn't get mixed very thoroughly. :unsure:
