Hey guys,

So I've just made my first All-Grain Brew. However, I think I've used waaaaaay too much galaxy, and it tastes very bitter. I was hoping to get lots of passionfruit aroma and flavour, similar to the Stone and Wood Pacific Ale, but I think I've overshot it.

I'm about to move it to secondary, and am planning to dry hop it at 6 weeks. I'll throw up the recipe below.

Now my question is, would it be possible to save the brew through different dry-hopping additions? I've originally planned to dry hop with 40g of galaxy. Although I hadn't yet decided whether I was going to do this all at once, or in 2-4 different additions of 10g at 3 days each. However, what do you guys think about using an alternative hop, such as citra, or a combination of citra and galaxy? Would that make a difference to the overall bitterness, and help accentuate the overall tropical fruit / passionfruit aroma? Or is there a different method to combat the bitterness? Or is there nothing to do but let it age for 6 weeks and hope it mellows out a bit, and continue with the current plan of dry hopping 40g of galaxy for 3 days.
Additionally, it took me about 30mins to cool the wort down to 27C in an ice bath, so the hops might have steeped a bit, although I removed the hop bags straight after the 60mins was over.

The bitterness will mellow in time and I think it will work out great for what I'm assuming is a 23-25l batch.
