Interested to hear of how brewers who live in humid locations store their grain.

Have you ever had mould issues?

Would storage of the bag in an air-tight container be suitable?

Duff,

No personal experience, but my suggestion would be to get some airtight containers & give the grain a quick flush of CO2 before sealing.
A friend here in Brizzy does this & his grains appear to keep their freshness for a considerable time.
