Below is a gb I had from the first person I ever met that did AG. Unfortunately he has fallen off the radar and I can't contact him any more. A shame really as he was a great bloke and I had heaps more to learn from him, and his ginger beer was awesome! I hope I am not revealing a secret recipe here. It was sweet and mellow and over 8% he reckoned! I have now omitted a few of the secret ingredients so I don't end up with a law suit.
I now have a boiler organised and a ginger beer kit can as well as macadamia honey (try gettin that at woollies!) ready to go but was wondering if anybody could tell me or help me with a few points with this. First in my mind is that I will have to end up with a lot of gunk at the bottom of the fermenter. Should I leave this in for the duration of the ferment? You don't ferment with the grains with normal beer so was a bit puzzled about all this grated ginger staying in.
Secondly I got no instructions on what temp to pitch and what to ferment at so am open to ideas there as well.
Also I notice that Ross sells a specific Ginger Beer yeast now. Should I go with that or the champagne yeast?

1 Ginger beer kit
500g brown sugar
500ml macadamia honey
300g dextrose
500g LDM
650g grated ginger.
All but honey into pot for 30 minute boil of 20L. Add honey in last 5 to 8 minutes
2 x 5 g packs of champagne yeast (red star brand)
