I use to have a decent clone recipe for this until the old computer shat itself. The grain bill was fairly straightforward but I cant remember if it was 3068 or 3638.
I considered building a starter from the bottle dregs but read elsewhere they bottle condition with a lager yeast. Anybody know if thats the case?
 
Pretty confident it is not 3638 as that screams Paulaner wheat to me. Not sure on the bottle yeast.

Unlucky about that computer. :(

Agree with him on the banana / clove thing.

I also found this resource useful when I was trying to get my head around ester production and how to manipulate it. I'm not a fan of over the top wheat's.

I just had a read through that article. It's not bad and the advice he gives for homebrewers seeems pretty sound. However some of the info along the way isn't correct so I'm not sure it gives a proper understanding of ester production. But at least the author recognises that there is wide variability between yeast strains, which seems to get left out quite often.
 
FWIW, Aldi has 5litre Franziskaner weizen for $29.95. There was none at the first shop I attended on my way home from overtime yesterday, but 2 at the one closer to my home, but I only bought one.

Hope to polish the whole thing off this week.

sorry for the hijack Dave but doon I cracked it at 2:30 it now 9pm still tastes good but you can taste it deteriorating obviously anyway any one reckon I can cut the can open get the yeast put.
 
Reckon it's worth harvesting the trub and building a yeast starter out of it? I've got two unopened Franzikaner kegs here :)
