I say go for it. If it's your first brew, I'd adjust that efficiency back to a more realistic 70%. There'd be nothing worse than having to chuck some DME in your first AG because you didn't hit your expected gravity.

I think bonj is spot on about the more likely efficiency on your first go.

Which crystal are you using? If possible I'd go with something German, I'd say that's probably more than you need if you need any at all.

And what yeast are you using?

Recipe/Malt looks fantastic. Whats the yeast? Eff of 85% hmmm?

Good luck and keep us posted.

Only thing id question is the batch size.

not sure on the yeast yet. And yeah the efficiency will prolly be less. Wasnt sure at the time what that was so just made the number higher to look good lol. Ideas on the yeast maybe wyeast 2308? Going large cause i can. Looks to me like a sound recipe and i have the gear to make larger batches so not gonna gimp on the volume. Reduced the efficiency back to 75%. Mods required to meet the style were as follows:

12kg vienna
4kg Munich
1.5kg 80L crystal
60g pearle 60min boil
40g hallertauer 30min boil
40g tettnang 5min boil

Will have the last of my gear this week so will be putting it down by end of next week hopefully.
