I was planning a very simple Kolsch, mostly Pilsner with a touch of Munich (~3.5%) [couldn't get any Vienna], WLP029 and Hallertau Mittelfrueh to ~25IBU. Mash at 65.
I just got a fresh pack of Ella from Barleyman and was thinking of using that instead. About 10 IBU from the 40 minute addition and another 15 IBU from the cube.
Any thoughts on how this would go?
