So you increase the pressure to give you the desired volumes of co2 for ambient temperature, and either use lots of beer line or a flow restrictor to regulate the flow rate when you pour.
 
There's also nowhere for the gas to go inside the keg, it's a matter of equal pressures - the way you carbonate is simply creating too much pressure for the beer not to absorb some of the CO2. It's not actually going to lose any carbonation until you let it out of the keg, and ...well...by the time you do that it's cold.... so no lost carbonation. :D
