Any thoughts on what temp I should do an infusion mash at for a Duvel Clone? I don't know if I should mash low ie. 64 Deg C for a high fermentable wort or would the sugar give me the big atenuation required?

Gidday Steve,

I have used the Belgian Strong Ale yeast, 1388, many times and have always managed excellent attenuation using a mash temperature of 66C. With that amount of sugar in the grist I would not mash any lower for fear of an extremely dry beer.

I would go for about 63-64 at mash in. 12.5% sugar is not alot for this kind of beer. Some wheat, up to 5-10% may be a good idea aswell to aid that huge head retention that duvel has.
