G'day All,
I've managed to get my hands on some Victoria hops from a retailer in the UK and now have everything needed to create the current and favourite version of this recipe. The Victoria hops I've purchased however have a staggering 16.7% AA, and naturally beersmith is now indicating that the 20 min addition of 25g (at only 1g/litre) is going to give me about 26 IBU's from just that addition. This seems excessive given this OG & style which would have a total total bitterness at or below 40.
I wanted to know what overall IBU's I should aim for this recipe? 35? 40? I'm also not sure if I should either reduce the amount for the 20min addition to limit the IBU's from that or limit the 60min bittering addition to get to the correct overall IBU's. Any help here would be greatly appreciated.
