TRYING MY first brew, Bought a Coopers Brewmaster Nut Brown ale and a Coopers orginal Dark ale. the Dark ale says to add 1 kg of sugar but the nut brown doesn't say how much sugar to add. Any ideas??? Thanks Jerry
 
First thing for making a better brew is to replace the sugar with malt, either dry, or liquid - light or dark or dextrose

The reason Normell says you should add malt instead of sugar is it gives you more body, mouthfeel and flavour, etc, and a slightly lower alcohol, as the unfermentables are the things that add body. Maybe pick up a pack or 2 of the Coopers brew enhancer's or whatever they are called. If you dont feel like doing that, 1kg of sugar will be sufficient. And try not to follow the kit instructions in regards to temps, ferment it at about 20C or so, even ambient temp should be fine at this time of year. The warmer you ferment it, the less likely it is to turn out well. The kit yeasts should ferment down to 18C or maybe even a touch less. Good luck with it, hope it turns out great

Suggest you find the closest Home Brew Shop (HBS) and look at the options there. Morgans make some great liquid malts that go well with Dark Ale like the dark crsytal. If not, get some Brew Enhancer 2 from the place where you got the Coopers cans. I've not made nut brown ale but I reckon the morgans caramalt would be just the go with it based on the information on sides of malt cans.

By mixing different malts with different cans there's a huge variety of beer you can make, and that's before you start mixing combinations, like Dry malt and Specialty malts.

For a real treat, try using 100g of Molasas in with whatever else you add to the Dark Ale. Makesit into a sensational drop.

Welcome to home brewing, I've been at it 18 months and am having a great time. Keep looking to make better and more interesting beer.
