My wife and friends are big fans of really hoppy double IPA beers, so I regularly brew them a big fat >100IBU 2IPA.
The only recipe for these I make is with four additions of Chinook hops, and I was thinking of mixing it up a bit next time for them.
When I look up other recipes for American Double IPA, I see multiple hop additions all through the boil.

1. Why add hops SO many times?
2. What benefits are there to hopping shedules of 7 or 8 hops in the one brew?
 
the answer to both questions is "complexity".

You get more hop flavour and depth in the beer by increasing the number of additions and the varieties of hops.
Mind you, some hops do not go together, so plan carefully.
 
Can I suggest changing your hopping schedule only slightly at first so you can then tell if you like the adjustments you have made. Otherwise with a whole heap of changes made in one go, you don't really know what is working well or otherwise in the aroma/flavour of your beer.

Its what I was planning to do, but Im still unclear where to go with it all.
I was looking to others for some minor change to hop schedule.
I was thiinking of just switching the dry hops to something different.

I agree, I also find that lots of small additions of a number of hop varieties gives a more integrated and balanced hop flavour. Sometimes if you just jam a truckload of one variety in at one time you get a really unbalanced profile.
 
I chatted quite a bit with Tony before i made my first IIPA. Actually, i annoy him regular with questions :D

This is the one i came up with, its an English IIPA but you can get an idea of the hopping.

I went with the tried and tested combination of Fuggles, EKG and Styrians that work so well in a Landlord. Not as big as what you are after but this is a very nice drip IMO. Scored 42/50 at SABSOSA last year.

You could beef it up to IIPA territory

Also search for hop burst - that was quite a fad here a little while ago
