Settled on the Bullshead Kolsch grain bill as a standard to test hops. I will try it with kolsh yeast one day, but atm it's us-05 and different hops at standard addition times so i can learn with a baseline.

So tomorows brew looks like this...

BullsHead Kolsch revised (Kolsch)

Original Gravity (OG): 1.050 (P): 12.4
Final Gravity (FG): 1.013 (P): 3.3
Alcohol (ABV): 4.91 %
Colour (SRM): 3.4 (EBC): 6.7
Bitterness (IBU): 25.1 (Average)

95% Pilsner
5% Wheat Malt

0.8 g/L Amarillo (8.6% Alpha) @ 60 Minutes (Boil)
0.8 g/L Amarillo (8.6% Alpha) @ 10 Minutes (Boil)
1.1 g/L Amarillo (8.6% Alpha) @ 0 Minutes (Aroma)


Single step Infusion at 66C for 60 Minutes. Boil for 60 Minutes

Fermented at 20C with

I also have some centennial, por and northern brewer hops so may try some of those to learn.

Is there some of those on that list i shouldn't make two kegs full out of?

Without a Kolsch yeast or German/Noble hops, I'm not sure there is much 'Kolsch' about the recipe, however the logic of using a simple base to test hops is valid and US05 is a good choice of yeast for the task.

However, if you wish to 'learn hops', I'd suggest using something like Hallertau or Tettnang rather than Northern Brewer, since NB is really (IMHO) just a high AA substitute for those more traditional hops.
 
I'll be using the hops i have in the freezer to learn about them before i buy more. I have half a kilo of nb that i haven't broken the seal on yet.

I know it's not kolsch without the yeast (i asked in the recipe thread) but got the tip that it would still make a fine base ale, so that's where the plan came from.


I'll be chilling with an immersion coil, Bada Bing, i'm making a counterflow, but won't have time to solder the fittings before i want to start my brew today.
 
It will be a nice brew but not a Kolsch. It's more of an APA than anything

Kolsch = no late hops + kolsch yeast

There is almost no room to move in this style
 
Yep, i get that hence the bastardisation tag. I've just used the grain bill. If it'll help people talk about the beer i'm brewing i'll edit the topic title.

Beer guys seem to be more hung up on style and copying others than any other group i've associated with. :eek:

It's funny the amount of threads that are on here either about buying beer from bottle shops or trying to copy the beer that you blokes have bought from bottle shops.

And everyones still saying they can brew better than what you can buy first time everytime.

But still buying beer. :rolleyes:

Apologies for the rant. Combination of a testy mood and a couple of beers.
 
Your recipe seems very similar to Ross's Nelson Summer Ale (a real cracker by the way) here is the recipe in the db. Perfect for testing out different hops.

If it was me the only thing I'd change in your recipe would be to up the ibu, or drop the og down a bit to balance it out.

Thanks mate. It's in the mash tun atm, so i'll see how it goes. If it's a nice, easy drinking guzzler i'll stick with it to try different hops.

My mate rang raving about Redback Wheat last night so been reading up on that here.

it'll be my next brew i reckon. I'll ring Mark and see if i can get some saaz at a reasonable price.

Im not saying there is anything wrong with copying a style but I did notice the are a lot of 5 star ratings in the RecipeDB on cloned beers. Some very nice beers to. I guess people are trying to make as close as possible and sit back and think, I paid less than half the price for this. Thats what i'd be thinking I suppose, Although I'd just be happy I made good beer.
How did your recipe come up anyway? Looked good to me.
